Remove the seats, remove the old carpet, lay the new carpet in (I'm assuming that since it's "custom" that it's custom for the car in question) - carefully fit the molded / pre-cut carpet into the contours on the floor - trim as needed.

If you decide to use the old carpet as a "pattern" do yourself a favor - don't trim the new carpet to close to the outline of the old carpet - you'll end up coming up short.

By the way - just a matter of accurate word choice but you're not going to "restore" it into a football helmet - restoration would be returning it to like new original equipment - you're going to modify it to look like a football helmet -
