Buy a steering wheel and adapter hub. That's about it. I think I've done it on almost every car I've owned.

They recommend unhooking the battery whenever working with or around airbags. I personally have always just unhooked the airbag connector very carefully and gone about installing the hub adapter for the aftermarket wheel. :P

you can go either way - I would recommend unhooking the battery - it's just not worth it to risk it. Always store armed airbags in a safe place and I think you supposed to store them face up (correct me if I'm wrong)

But other than that if you buy a hub kit it's super easy. I have made hub adapters before ( simply because they didn't make one for my car ) but the hardest part of installing a hub kit will be removing your stock steering wheel.
Best of Luck

Have you got recommendations for a good aftermarket hub for the Mk3?

Depends on the wheel. Momo/Sparco/OMP = Momo hub. Nardi/Personal/Fittipaldi = Personal hub.
