I don't have a Bentley to give you the torque specs, but all you really need is a 3/8" drive ratchet, the proper socket (haven't looked the bolts yet to know) and woblle extension is a big help. Basically, just unbolt the pan, scrape off the old gasket(make sure the block surface is clean so the new gasket will properly seal), install the new gasket, and install the new pan.

When I changed out the oilpan in my scirocco I used a putty knife to get most of the heavy stuff off(gasket) then a razor blade to get what was left(be careful!) and cleaned up the residue that was left with rubbing alcohol. Then installed the pan according to the factory torque specs. Note: this is very important! if not done right this will never seal and you can strip out the bolts very easily. I followed the directions and never had any problems

You can clean off the old gasket with whatever works, a putty knife, a wire brush, flat screw driver. What they ment about taking too much off is if you use a putty knife or screw driver, don't gouge the metal, be careful and only remove the old gasket.

Brake/Carb cleaner also works good to clean it off once you've got all the big pieces of gasket off, it will remove most resedue.
