New member with Passat problem

I have a 2000 Passat GLX 2.8L with approx. 137,000 miles on it. Runs great but overheats in traffic and when idling on an incline?!

New timing belt, waterpump and all hoses replaced. No coolant leaks. Heater core was leaking but disconnected heater core as not really that important in Hawaii. That seems like when the problem started.

When it is going to overheat I can tell because air conditioning suddenly gets warmer. If I can get car up to speed right away it will cool down and no problem. If not I'm screwed. No auxilliary waterpump on this car.

Any ideas, anyone?
